Palazzo Victoria hotel in Verona is one of the most unique places I have ever stayed. The hotel is an old school kid with a modern heart. Its foundations are steeped in history. And I mean that very literally. The foundations date right back to the Roman times. And so do the mosaics in the floors and parts of frescos preserved in the walls.
Located in Verona's buzzing shopping and historic district, Palazzo Victoria is where Roman ruins and ancient frescoes meet concrete facades, graffiti and acid-green moss. This extends right through to the kitchen, where a Michelin-starred chef whips up a modern twist on traditional Italian dishes.
The breakfast buffet is available between 7am and 11am; lunch is served from 12.30pm until 3pm; dinner is 7pm until 11pm, all right here in the charming Borsari courtyard and also inside in Borsari 36 restaurant.

If you are coming here in the summer, beat the heat and siesta. I made the grave error of not doing this on my first day in Verona, and oh boy did I regret it. Learn from my mistakes and take an afternoon nap at one of Palazzo Victoria's lovely hotel rooms (they come with aircon).
While you are there, spend an evening at Borsari 36. Sit at the round table in the corner by the windows and olive trees (that was our table during our visit). From here you can watch the whole room, as well as get a perfect view of the Italian open kitchen - which is the centrepiece of the restaurant. There are also tables outside if you feel like some alfresco dining (bring mosquito spray).
We had the porcini mushrooms with Parmesan and a selection of canapés to start, followed by cuttlefish dumplings. And tiramisu for desert. I loved the 5 types of bread served during the meal, including the 48 hour leavened bread, which may just be the best bread I have ever tasted.
Don't miss drinks at the hotel bar. The knowledgeable bar staff can whip up whatever you fancy. There is also an extensive menu in case you would like some inspiration.
